So is it possible every part of the ATMOS mixes can be extracted?

Not sure what you mean - that was demixed and remixed from 2 channels of the 5.1 rip.

Atmos mixes circulating among the general public (not of R&B particularly, but in general) can be opened in Audacity in the same way as 5.1.

Wow! That's a post! :-)
I turns out that "And I Love Here" is one of my favorite early McCartney ballad (with, a bit later "Things We Said Today"; I love the almost Spanish guitar solo, which I think McCartney kind of revisited in "Distractions" on Flowers In The Dirt.
