Apparently a new interview has surfaced with John talking about it. But below suggests it may have come from the Nagra's

People only assume that LIB was the last thing they recorded in the studio because it was the last Beatles release even though Abbey Road is their last studio recordings.

Could be this situation in the article that gave way for Harrison to have his way with Here Comes The Sun and Something (which became more memorable than the other tracks?).

Yes, Abbey Road was the final album they recorded... but "I Me Mine" was the final recording in The Beatles' name.. and of course, IT was on Let It Be.. so it's not as cut and dried as it has always been painted!

And, o'course, Eric should have been there at the "I Me Mine" session....to replace an absent John...!!!
(Where was Billy Preston or Nicky Hopkins - either of them could have been useful for this track).

And according to Pattie, John came to Henley and suggested George to replace Paul by Klaus Voormann after the furore surrounding Paul's interview for McCartney
